Crispy Peanut Biscuits

Ingredients

  • 150 g butter
  • 150 g crunchy peanut butter
  • 175 g brown sugar
  • 1/1 egg
  • 200 g plain flour
  • 1/1 tsp baking powder
  • A pinch of salt
  • 175 g roasted and salted peanuts

Preparation

Mix the butter and peanut butter together to produce a homogeneous mixture. Add the sugar, egg, salt, flour and baking powder (in this order, one after another) and stir them in.

Roll the dough into a roll, cover it in clingfilm and put it in the fridge for an hour.

Chop the peanuts into chunks.

Cut the dough into thin slices and roll each one into a ball. This recipe should make around 40 balls. Press each ball to flatten it slightly and place it in the chopped peanuts to cover one side with the peanuts.

Place the biscuits on a baking tray lined with baking paper.Ensure that they are well spaced out. They will spread when they are baked.

Bake them in a pre-heated oven at 170° for approx. 13 minutes.
